Study on Sublimation Drying of Carrot and Simulation by Using Cellular Automata

Vacuum freeze-dried products exhibit properties characteristic of porous media, rendering them superior in both drying and rehydration capabilities. However, the process sublimation is constrained by its substantial time energy costs. To comprehensively grasp technological identify optimal parameters, cellular automata method was employed for simulation. Carrot slices, measuring 10 mm thickness 40 radius, were selected simulation experimentation. The characterized using a two-dimensional heat mass transfer equation, inclusive dusty gas model. Additionally, automaton model applied to simulate process, temperature, moisture content changes stage. Then, accuracy verified through There remarkable alignment between experimental outcomes, with determination coefficients R2 99.4% 97.6% temperature variations.
